Good morning all, I hope you had a great weekend!  We sure did.  But I’ll get to that in a later blog.  This morning I want to give you some ideas for everyday meals on a budget.  Let’s start with a list of some items you should always have on hand.  These basics may include some items you consider common sense and others may be new to you.  First keep your cubards stocked with can goods they are cheep and you can double up at times throughout the year when your local grocery has can good sales.  These are great items to use when you need a quick meal.  Other items include eggs, milk bread/crescent rolls/biscuits, rice, instant potatoes, beef and chicken broth, ground meat, pork chops, chicken, dressing, a variety of seasoning packages, pasta, and tomato sauce.  Dessert items to keep around are jelly and jams, graham cracker crusts, cake mixes, canned fruits, and fresh fruits, and melting chocolates, icing and frozen fruit.  Keep it stocked and replenish a little at a time each shopping trip.

Okay, so your husband texts you he heard from a friend today who is in the area and he invited him to dinner.  He and his family are in town and will be over about 6pm.  It is now 4pm and you have no time to go to the store or find a recipe.  Get out the crock pot ladies!  Use rice, meat or chicken cut into cubes, mixed can veggies or two different cans or some frozen veggies, and beef or chicken broth (use the whole container depending how many you are feeding or keep leftovers for lunch to send with your hubby to work).  If the meat is frozen, defrost in micro and pre-cook on stove; this will help it cook better and faster in crock pot.  To add to this meal bake some refrigerated biscuits.

Dessert?  Cupcakes.  These are quite fashionable.  Throw in a mix add food coloring to a white cake mix or add sprinkles to make fun for kids.  Once the cakes are baked and cooled, cut off top and set aside.  Take the icing and put in a small zippered bag and snip off one small corner to make a pastry bag.  Create any design you wish and replace the top of the cake and ice.  Finish by decorating with your choice of sprinkles.  It will look like you spent a lot of time and everyone will love it.     Good Luck and happy savings!
